  • 20 g caster sugar
  • 220 g full cream milk
  • 20 g unsalted butter
  • 2 eggs
  • 1 tsp natural vanilla extract
  • 50 g dark chocolate, broken into pieces

Puff pastry

  • 250 g plain flour, plus extra for dusting (see Tips)
  • 200 g unsalted butter, chilled, cut into pieces
  • ½ tsp sea salt
  • 2 tsp lemon juice
  • 100 g water, chilled

Assembly

  • icing sugar, for dusting
  • 50 g fresh raspberries, (approx. 12)
